**GRANDMA'S RECIPES**

 

 

Quick Chicken Soup

2 cans chicken broth1 can white chicken meat
small onion-chopped2 stalks celery
1 cup noodles-any kind you like1 teaspoon cornstarch
if you like creamy soup

 

Cook noodles in broth for 15 minutes.
Add chicken, onion and celery
finish cooking till noodles are done.
Add salt and pepper to taste.
Mix cornstarch with 1/4 cup cold water.
Add to pot and enjoy.

 

 


Chocolate Chip Cake

1 box cake mix
(white or yellow)
1/4 cup of oil
2 eggs1 sm box of chocolate pudding
(cooked variety)
cook and let cool,

 

mix all the ingredients in mixing bowl,
if you don't let the pudding cool,
be careful or you will cook the eggs.
Pour into cake pan.
Put Nestles Chocolate Chips on top,
spreading evenly then sprinkle with powdered sugar,
I use a small sieve to sprinkle it
Bake at 350 degrees for approx 40 min,
insert tooth pick (avoiding the chocolate chips)
and when it comes out clean cake is done.
Let cool and serve, needs no garnish

 

 

Aunt Carrie's Fruit Cake

 

1 pound candied cherries1 pound candied pineapple
1 pound pecan meat6 eggs
1/2 pound real butter (softened)
*do not use oleo*
1/2 ounce real vanilla extract
1/2 ounce lemon extract2 cups self-rising flour
1 cup sugar 

Grease and flour a large tube pan.
Set aside.
Into a very large bowl
cut candied fruit into small pieces,
add flour and mix by hand,
separating fruit pieces by using flour to dust each,
making sure they are all separated.
Add pecan meat and mix again.
Set aside

In a medium size bowl beat sugar and butter together.
Add 1 egg at a time until all are well beaten.
Add in extracts and blend.
Pour over dry mixture and blend with hands
to make sure all is moist.
Drop by handfuls into tube pan,
try to distribute it evenly
Do Not PACK down the mixture.
(it will settle itself)

Bake at 350 degrees for 50 to 60 minutes
(**when cake is done it will pull away from sides of pan**)
Cool and serve. Keeps in a sealed cake container for 1 week.
Can be frozen for later use, defrost at room temperature.
Can also be cooked in several different size pans for gifts.

I like to cook this in small loaf pans and give as gifts.

 

 

Latkes


To make about 12 latkes pancakes.


5 medium sized potatoes3 tablespoons flour
1 teaspoon salt1/4 teaspoon black pepper(optional)
1 eggOil for frying

 

Peel the potatoes
grate them in the food processor or by hand.
Place the grated potatoes in a sieve
and allow all liquids to strain out.
Squeeze to make sure all liquids have been strained.
(the less liquid, the latkes will be more crisp and crunchy).
Place potatoes in a bowl,
add flour, salt, pepper and egg.
Mix all well.
Heat oil to high temp.
Take a tablespoon of the mixture and place in hot oil.
Add more latkes and continue to fry
till all latkes are brown on both sides.
Take out and place on paper towel to absorb oil.
Serve hot with sour cream or applesauce.
** 1 grated onion can be also added to the mixture.

You can make them ahead in time and
warm them in the oven at low heat temp.

 

 

PORK CHOP POTATO BAKE


about 8 med to lrg potatoes
peeled & finely chopped
2 cans of cream of celery soup
at least 6 center cut pork chopsone large bowl of flour
1 lrg. bag each of parmesan mozzarella cheese mix
& cheddar cheese
Salt
pepperparsley flakes
some type of season allfrying pan
1 lrg.casserole or baking dish

 

Preset oven to 400 degrees
rinse raw pork chops under cold water,
Salt & pepper pork chops, roll in flour.
Fry pork chops until golden brown on each side.
Mix in baking dish over the 1/2 of the potatoes you prepared:
1 can of cream of celery soup as per directions on can
(1/2 each of milk & water).
season lightly and layer pork chops over the top.
On top of pork chops
layer the remaining potatoes,
2nd can of soup
(the same as you did to begin with),
season lightly.
Cover dish with tinfoil,
bake for 1 & 1/2 hours or until done.
Take dish from oven, remove tinfoil,
heavily cover in chesses
return to oven uncovered
until cheese is thoroughly melted.
Remove, sprinkle with parsley flakes and dig in
MMMMMM GOOD STUFF!
Serve with green beans & corn
or other veggies if you like.
SERVES 5.

 

 

"Neiman-Marcus Cookie"

(Recipe may be halved)

 

2 cups butter4 cups flour
2 tsp. baking soda2 cups sugar
5 cups blended oatmeal24 oz. chocolate chips
2 cups brown sugar1 tsp. salt
One 8 oz. Hershey Bar (grated)4 eggs
2 tsp. baking powder2 tsp. vanilla
3 cups chopped nuts
(your choice)
 

 

Measure oatmeal
blend in a blender to a fine powder.
Cream the butter and both sugars.
Add eggs and vanilla
then mix together with flour, oatmeal, salt,
baking powder, and soda.
Add chocolate chips,
Hershey Bar and nuts.
Roll into balls
place two inches apart on a cookie sheet.
Bake for 10 minutes at 375 degrees.
Makes 112 cookies. Have fun!!!
